Grapefruit Fennel Salad

Ahh, this salad screams Spring to me. The brightness of the grapefruit and mint, the crispness of the fennel, the crunch of the salad greens, paired with with a tangy vinaigrette – just pour me a glass of rosé right now! It’s also about 65+ degrees here in Georgia nowadays and I am here for the warmer weather vibes.

This super simple salad whips up in a few minutes with great flavor. To round it out as a meal, try adding some tuna or sardines to the dish for some added protein. Or you could add some quinoa for some fiber. It’s your salad, so you do what feels right.

Not going to lie, this recipe is pretty easy. The hardest part is cutting the grapefruit segments. If you don’t know how to cut grapefruit segments, check out a video here. Or if you want it really easy, just buy the grapefruit pre-cut!

So all you have to do is place your greens in a bowl, chop the fennel and mint, and cut the grapefruit sections. Then you can put them all in a large bowl while you make the vinaigrette.

To make the vinaigrette, whisk the olive oil, vinegar, and mustard together. Then, pour over the greens and toss them all together. Put your salad into serving bowls, top with the mint, and serve!

Like I said before, if you want to add a little “umph” to your salad, add a protein and a high fiber starch. Some ideas that could work here are:

Protein:

  • tuna
  • sardines
  • chicken
  • tofu

High Fiber Starch:

  • quinoa
  • barley
  • farro
  • whole wheat couscous

The added benefit of eating this salad with a protein and high fiber starch you ask? You’ll stay fuller, longer!

Grapefruit Fennel Salad

A light and bright salad with grapefruit and fennel, perfect for spring!

Ingredients
  

  • 3 cups spring mix
  • 1 cup fennel thinly sliced
  • 1 grapefruit cut into segments
  • 2 oz feta
  • 3 tbsp olive oil
  • 1 tbsp champagne vinegar (or white wine vinegar)
  • 3 tsp whole grain mustard
  • 2 tbsp mint chopped

Instructions
 

  • Add spring mix, fennel, grapefruit, and fennel to a bowl.
  • In a separate bowl, whisk together olive oil, vinegar, and mustard for the vinaigrette.
  • Drizzle vinaigrette over the salad and toss to coat.
  • Top with mint and serve!
