Grapefruit Fennel Salad
A light and bright salad with grapefruit and fennel, perfect for spring!
- 3 cups spring mix
- 1 cup fennel thinly sliced
- 1 grapefruit cut into segments
- 2 oz feta
- 3 tbsp olive oil
- 1 tbsp champagne vinegar (or white wine vinegar)
- 3 tsp whole grain mustard
- 2 tbsp mint chopped
Add spring mix, fennel, grapefruit, and fennel to a bowl.
In a separate bowl, whisk together olive oil, vinegar, and mustard for the vinaigrette.
Drizzle vinaigrette over the salad and toss to coat.
Top with mint and serve!
